How's the area around Lake Okeechobee for a hammock?
Or is a tarp tent a better bet?

Also, hows the rest of the trail for a hammock?

Well, I can't speak to that area but I've used my hammock through the Ocala and Osceola sections. No problems.

I use a hammock probably 80 percent of the time on the trail. Especially in the warmer months, and there's plenty of places along the trail to set up. I haven't been completely around Lake Okeechobee, but you can find places to hang there as well. If not, you can actually "go to ground" with a Hennessy Hammock by setting it up with trekking poles.

I can only think of a couple of miles around Lake Okeechobee that hanging opportunities don't/didn't exist. They aren't even consecutive miles. No worries.

Hammocking almost essential for the southern 40 miles
