I believe in zen when it comes to chops. A little salt, a little pepper. For variety, try Montreal Steak Seasoning or some Mesquite Seasoning.

marinating in OJ and soy sauce is also pretty damn good....some fresh garlic slices on top.....:p

Boil some sweet potatos, peel, slice, pan sear chops in butter, cover in sweet potatos...cook 20 minutes add more butter and pure vanilla, salt and pepper to taste.

All could be done in the woods with 1 pot, large piece of thick tin foil and a good bed of coals.

i dont eat potatoes or butter. i skewer the cops and drape 'em over a wood fire, smoke adds flavor, no pan searing....but your way sounds tasty too.

mmm applewood smoked porkSmokin'! Now we're talking. I too like the fruitwoods (apple, pear, plum, grapevine) with thin cuts like chops, trout or chicken.

If you happen to live in an area where Bradford pears are planted as ornamental trees, just wait until the wind blows harder than 20 mph. Somewhere near you a Bradford pear will split in half. Grab a branch or two, let it dry for a year and you've got a great supply of smokewood. Bradfords don't fruit but they are pear trees.

A healthy sprinkling of "Mrs Dash" original, grill 'em the way you like em plus whatever else you want, the sweet potatoes sound great, baked if you got a fire, a little cinnamon, nutmeg, and butter, smores made with a rich dark chocalate and to top it off, two fingers of JD. Heaven on earth!

Mrs dash sucks.....that's cause someone ruined the thanksgiving turkey by seasoning with it.

It's not right....and now it's not allowed:D

Adobo is fine

I love chops/pork on the trail. I marinade them in a strange mixture meant for chicken and then freeze them so they stay fresh for a day or two. They are heavy, but tastey.

Oil,vinegar,poultry seasoning,beer,granulated garlic,onion powder,pepper,salt.

Like I said ,strange combo...but it really does taste good.

That's not strange....sounds like the beginning of everything holy about pork:D

Sub the poultry seasoning for chilli powder and coriander....you'll thank me:D

Pan fried chops sprinkled with adobo and cooked with onions. Served up with a side of black beans and rice, topped with sour cream.
