Last month my Roasted Eggplant Spread (http://www.getoutzine.com/node/1070) was featured in Get Out!
And now a recipe that is coming out in my new book was featured on the same site.
Chana Masala (http://www.getoutzine.com/chanamasala) (this one is vegan but you could add chicken if you like)
Those look delicious! I am definitely going to try those out. In the photo of the chana masala, the potatoes look really large. About what size is "bite size", and how do chunks of potato rehydrate?

I didn't take the photo... that was done by the publication and the pieces shown are way too large. I tend to keep them much smaller than that.... say about 1/2 inch or slightly smaller.
