If thats the way your going to be cooking on the trail just buy a mid level dehyrator. Veggies are very simple to do. You'll be hooked in no time preparing great tasting food in any size portion you want.

Preparing your own dehydrated food can make excellent meals.

There are others, here in the forum, that know more about that than I do.

Natural food stores and food coops will usually have dehydrated vegetables.

Regular grocery stores often have soup mixes which include some dried vegetables. They also have dried onions in the spice section.

You can also find dehydrated or freeze dried vegetables at some gourmet or upscale groceries.

Also check Asian grocery stores. Some have really inexpensive dried mushrooms. Also many have really good instant sauce mixes (Indian curry, soup mixes). Prices for the same items in the grocery store are usually more expensive.

These are great, and you can get them at WalMart -- Snapea Crisps, make from green peas, large bag only weighs 3.3 oz.
