Love jerky, but some of the pieces I chew are tough as leather...anybody know of a product that is better than others? Tasty, yet tender?

I really like any kind of peppered. A little spice with a lot of flavor. A couple of good local brands. But Jack Links peppered is pretty widely available.

I've replaced beef jerky with Steak Nuggets (http://www.walgreens.com/store/catalog/Meal-Planning/Original-Beef-Steak-Nuggets/ID=prod4412905-product?V=G&ec=frgl_&ci_src=14110944&ci_sku=sku4411775), which are about 1" cubes and are softer and tastier. I've only tried the Jack's Links.

This topic has been discussed ad-nauseam. Many opinions , so my advice is to sample different brands over the next few years and then decide for yourself.

Have to agree with Crumb here as the best jerky is usually the home made stuff; especially in regard to tenderness. All too often the commercial stuff is like sole leather.

Currently in my local Costco
Best tasting (sweet) and most tender jerky I have ever had. First time I have tried pork jerky.

any flank roast or briskit
slice any thickness evenly
put in bowl with ketchup,salt,pepper,horseradish,cracked reds,honey,cyanne,chili powder
mix around untill coated
lay on racks in oven on low 16 hours with wood spoon in door releasing moisture
put in open container untill cool and then leave open 24 hours in a dry place
seal or vac seal,freaze or dont,store in a ball jar opening and closeing up to one year.
be shure to remove all fat. every bit.
a 24 inch small oven with 2 racks holds one brisket or flank roast. just.
this is the best single food to stop buying and start makeing and mailing to drops while hiking. real jerkey is an important part of a hiker diet. or its poison. if its storebought.

Try the McCormicks's Bourbon Marinade dry powder in a packet. I add a 1/2 cup of brown sugar to mine and quick cure. Trim as much fat off the meat as possible. Cut the meat with the grain for more chewy jerky and place in a dehydrator. Ground can also be used...after marinating, roll it out on a cutting board until about 1/4" thick and slice into 1" wide strips...then place the strips with a spatula in the dehydrator trays. This method makes it very easy to chew.

"Damn Good" is my personal favorite. Available online in normal to excessive quantities for a pretty normal price.

By far the best I have tasted, though some of the homemade guys on this board can give them a run for their money.

Or make your own pemmican. Keeps well and provides more calories. Use cheap cuts of beef and add flavorings to taste, kind of like Matt's post but keep the fat.

How about the LOWEST SODIUM jerky??? Most of that crap is so high in sodium it would raise your blood pressure 50 points!

The stuff I make in my dehydrator. I can control the cut of the meat, how I slice it, and how much moisture is left before I pull it. And, I know what it's preserved with.

Make your own, its super easy. All you need is a box fan, some rope or bungee cords, and a paper air conditioning filter. Look up beef jerkey by alton brown on foodnetwork.com for a good recipie using this method. I use a dehydrator, but used the box fan method many times in the past. Making your own beef jerkey is so much cheaper than buying it premade.
