Veggie Tofu Scramble
Serves 1-2

Heat a little extra water while making your coffee in the morning and you will be one step ahead for this recipe. Look for tofu in shelf stable tetra packs.

8 ounces firm or extra firm tofu
½ cup dried mixed vegetables
1 teaspoon vegetable bouillon
Olive oil
Parmesan cheese to taste

At home: place the vegetables and bouillon in a zip locking freezer bag. Carry the other ingredients separately.

In camp: bring about half a cup of water to boil. Add to the vegetables. Seal the bag and set aside in a cozy to keep warm.

Heat a couple of tablespoons of oil in your pan. If the tofu is not in a tetra pack, drain it as well as possible. Break up the tofu slightly while it is still in the container. Add to the hot oil in the pan, mashing with a fork. Cook until heated through and starting to brown, about 5 minutes.

Add the rehydrated vegetables to the pan and stir well to combine. Heat through if needed. Serve topped with Parmesan cheese.

That looks awesome. What is a tetra pack? Is there a such thing as freeze-dried tofu?

Tetra Pak (http://www.morinu.com/product/products.html)- shelf stable (no refrigeration required) tofu.

There IS such a thing as freeze-dried tofu. It is hard to find though. Not sure it would work they way you would want it to in this dish. The FD stuff is better for putting in soups etc.

And most of the freeze-dried tofu is nowhere as nice tasting as the Tetra Pak stuff :)

I didn't think there was a such thing as tofu that didn't requir refrigeration. Is it in most grocery stores?

Oddly enough it is often sold with the fresh tofu so look there! It is a rectangle shaped little brick. Many stores sell the tofu in the produce section - so start there first. Where as natural food stores sell it on the normal shelves, sometimes in the Asian section.

I can buy it up here in our little city's grocery stores so you should be able to get it in most major chains. It was in a weird spot in the store though... that's why I tend to wander the aisles from time to time. It is weighty though and tofu dishes can be pre-made as they dry and rehydrate decently.
