I would assume there is a window of time where most arrive? Is it one of the town where many stop? Or are there other options for folks in the proximity?

Just wondering how "happening" it might be the days we will be there - May 5-7.

Every thru hiker stops there.
You'll see hikers then. Though probably not as much as say, April.

Don't know. I'm leaving around March 31 and plan to hit Hot Springs around April 15. I'm not 'xactly and early starter.

"Schedules" have a way of changing once you are out there. Assuming you take a day off in Hiawasse or Franklin (or both!) and a day off in Gatlinburg you're talking 20 miles per hiking day every day from day 1. Thats certainly possible (and done by many) but much more aggressive than your fellow hikers will be doing. Except for the GSMNP you'll almost certainly be hiking with different people every day. Good luck.
