View Full Version : Betty Crocker Mashed Sweet Potatoes

I tried these instant potatoes, using the box directions, about a year ago and did not like them very much but I got bored with my regular foods and decided to try them again using my own recipe. One pouch wil make three servins at home or two on the trail.

Mix well in a bowl and then divide into two one serving baggies:
One pouch of potato mix
1/4 C. Nido
2 tsp. Tang or lemonade mix (or use True Orange crystals)
1/2 tsp. ginger powder

In another small baggie (or divide into two):
2 tsps. orange peel
1/3 C. dried pineapple bits
1/4 C. raisins, craisans, apricots or other dried fruit
2 Tbs. pecans or other nuts

To prepare:
Boil 1 cup of water (or two cups if making two servings)
Add a Tbs or two of butter or margerine if you have it
Add half of the fruit/nut mix (or all...)
Remove pot from stove and cover for a mnute to let the fruit rehydrate
Add the potato mix and stir then cover for a few minutes (or add water/fruit to the mix and place in a cozy for FBC)

I don't usually meaure ingredients so the above is just a best guess, just use more or less to match your own taste.

These potatoes are kind of sweet and mildly spicy. They do not go very well with gravy but you could add a small can of ham, sausage, chicken, or spam if you like those things to make a one pot meal. They are very bland on their own.
