I've successfully dehydrated sliced meatloaf/meatballs made of beef. Would using ground turkey make any difference? Is it more likely to spoil? How long do you think it would last?
I've also wondered about dehydrating sliced deli meat. What do you think?

I've made jerkey out of (98% lean) ground turkey. It kept fine on the counter for as long as it lasted - a couple months. I did mix jerkey cure into it, so that no doubt helped its keeping abilities.

A lot of sliced deli meat has a good deal of fat in it. Those would be more likely to spoil when the fat got rancid. If lean, the only consideration would be contamination during the slicing/bagging process.

I've dried packaged sliced ham and turkey breast. Cut into strips first. The ham sorta has a bacon taste/texture.

Some sliced turkey is very low in fat. It dried up nicely but I'm not sure how long it will last. I suspect it will hold up pretty well. Thanks
