I've never figured out how to make fresh tortillas on the trail ... today, though, I may have found a good substitute - pupusas. Pupusas are fried masa harina with a filling (cheese, beans, whatever you have on hand).

Mix masa harina with water and a little salt, make a ball about the size of a golf ball, flatten it out to about 6 inches, toss a little cheese on top, make another ball and flatten it out, then put it on top of the cheese. Throw some oil in a pan, and fry the pupusa in it.

I just made a bunch for lunch, and they turned out pretty well. I haven't tried this over a backpacking stove yet, but it should work.
