I am planning a Georgia section hike starting at the approach trail May 13. Do I need to pack a down jacket or vest, or will I be fine with a fleece jacket, wind shell and rain gear?

That's what I went with when I thru-hiked (started March 10) and it was fine. If I were doing it now I'd use a light synthetic puffy instead of the fleece, mainly because an equivalently warm garment is lighter and packs smaller and I happen to own it, but you don't need to run out and shop.
