Are there any waterfalls or places of immense beauty that are right off the trail that shouldn't be missed?
Jones Falls .1 off the trail about 5 miles after mountain harbor hostel in TN (also not to be missed-best breakfast ever)
Falls right after kincora hostel are pretty cool too.

A few that come to mind that are slightly off trail:
Mt Rogers summit. (VA)
Creeper Trail (VA)
Pinnacle (PA)
Sugarloaf summit (ME)
I listed some of the notable places on the AT in my "Datto's AT Thru-hiking Tips" that is located here:

Swim in Dismal Creek Falls (you can camp there)
Crabtree Falls (VA)
Plenty of good side trails in Shenandoah (White Oak Canyon, Old Rag)
If you get that far the cabin at Upper Goose Pond in Mass. is hard to beat. Situated on a glacer pond .5 miles from the AT. A inclosed cabin with bunks. Kitchen. Fireplace in dining/common room. Great swimming, a canoe for hikers to use, spring water delivered and coffee and pancakes for breakfast. Best of all the cost to hikers is $0.

Weaverton Cliffs, Harpers Ferry W.Va. A short blue blaze to the right of the AT just before you descend to the C&O Towpath.
