I suppose you could sit in the pool at Long Creek Falls but that would be about it.

Just north of Hana'uma Bay on Oahu there is a great little inlet swimming hole where you can pick how far you want to jump, anywhere from 5 feet to 40 feet if you time the waves. It's other claim to fame is a scene from the movie "From Here To Eternity" was filmed there.

On the AT, you mean? Housatonic River, Falls Village, Connecticut (see below). Dismal Falls in Virginia, south of Pearisburg. Also in Virginia, the James River footbridge, which is way higher than either of those two, but isn't exactly a cliff. You'll have a lot of local company if you do that one.
