This might be just me (it usually is) but I think that one of the pet peeves with my backpacks is how stinky the shoulder pads get after a multi week hike with all the soaked sweat. It would be a great benefit to have them to be easily removable so that after you return home you could just throw the shoulder pads (and maybe the hip belt too) into the wash machine.
The actual fabric of the pack doesn't seem to get that stinky from my experience. Probably because the pads are thick and spongy and soak up a lot of sweat that is then hard to get out.
