I've used packaged pepperoni and salami many times over the years on the trail, but does anyone know if deli sliced pepperoni and salami will keep over the course of a 5-7 day hike?

yeah it's fine, so is most ham (lots of nitrates and salt). It won't dry out as fast if you cut it a little thicker also.

You can buy pre-sliced pepperoni and salami in small packages. I have seen it at Dollar Tree as well as supermarkets. They don't need refrigeration, unless opened, but should last the day once you do open a package.

Nothing beats a good ole summer sausage, never saw one until I hiked. Now it is a lunch staple.

I always bring nice Italian deli meats when I go for a week or less hike. No problem whatsoever. Cappicola, Sopressata, Volpi, Pepporoni.

Summer sausage, yes. Also I take pepperoni / salami from the deli but have them whack off a chunk, 8oz or so to cary and slice as needed. The Boars Head Italian dry cured salami (or equal) keeps well even though the label says "refrigerate after opening". If you're thinking about a can of Kraft squeeze cheese in a can, find a way to secure the top cap. Once I did not and the top came off. When my food bag got compressed, the nozzle opened up and filled my food bag with most of the can of cheese. YUK.

Thanks everyone. I was on the way home this afternoon with a 1/2 pound of each and got to thinking it might not be a good thing to get sick 40 miles away from the car.

from my days of understanding spoil both will suppress past 90 days both mold and other pathogens.

Buy and carry whole sausages (pepperoni, hard salami, summer sausages), and slice on the trail. Each slice is an opportunity for pathogens to enter, so cutting just before eating will give the best results.

Odd Man Out, I dont know where to send you locally, country ham slices are pretty common down here and put out by rather local or regional packers.

On the upper end I might suggest Edwards of Surry at http://www.virginiatraditions.com.

You can get a big slice individually sealed. I have done country ham before and it is a nice change from the summer sausages.
