I did a 3 hut trip with my family a few years ago. With 10 and 12 year old kids it made for long days but was great.
I just left my car at Pen Mar for 2 nights, no problems.
Doesn't look like they will come pick you up in the notch, that would be nice since most of the hotels I am looking at in Franconia and Lincoln will do that.

I parked in the lot up by the bunk houses for 2 weeks, they charged a few dollars a day.
Do the do Delaware Water Gap, NJ side then PA side all in one day, should get you around 3,000 of elevation gain.
It has to be better than it was back in the 80s, it was a total road walk, yuck.
It's not that big a of a deal, the rock sections come and go, it's not solid rocks for 50 miles or anything.

I did GSMNP last April, every shelter was full every night, plus the rangers were ok, I saw people hanging most nights.
You might want to look at the AMC huts in the White Mountains, they are group bunk rooms but the make you breakfast and dinner. Your not gonna be able to stay in a hotel every night in PA.
I did a couple solo hikes at 17-18, not a thru, never had any problems.
If it went through the way it is now you would just have to buy a hunting lic in order to go hiking.

I can tell you T-Mobile sucks up through GSMNP, people would regularaly be talking on their phones and I had no service.
Gear seems to be a big problem on the trips I have done with Boy Scouts. Very often if the parents don't hike the kids have no idea what to bring. Maybe your group is more experienced.

I use a 20 degree top and bottom quilt and I am comfortable down into the 40s, once it gets in the 30s I get cold but I am a very cold sleeper. I have had a couple times where wind has blown rain...
