On my hike I stayed in shelters the majority of the time. Easier less setup/take down time just more relaxing for me.
If starting the trail from Springer on April 1st it will be Turkey Season for most of the month through Tennessee, NC, and Virginia. I ran into several turkey hunters during my hike and no problems.

I hate to see this but if it is unsafe, I understand. In 2014 it was the perfect shelter at the perfect time when in pouring rain I was able to secure a spot and get warm, dry, and cook dinner.
Rt. 9 will be your best bet. Locals are very use to seeing and helping hikers get into town.
I used a Pocket Rocket on my hike in 2016 but I would say that the Jet Boil was the most popular back then.

Many of the trails in the west (PCT of example) require a stove with on/off switch. Open fires are illegal so a wood stove would be a violation and fine.

The short answer is you don't. You typically eat big meals on resupply or zero days but while on trail eat what you can. I only weighed 145 lbs at the start of my hike and lost 15 by the end.
