Question Start at Amicalola Falls and head north in November

I've searched and I couldn't find any data...

I was curious of the attendance was on that part of the trail is in November? Most likely the weekend before thanksgiving.

Once hiked from Springer Mountain to Neel Gap weekend before Thanksgiving. Hawk Mountain Shelter and Campsite was packed the first night. It thinned out after that

Thanksgiving week can be popular on the trail in the South. It won't be packed like early April, but you won't be alone. Weather is highly variable. Not sure the dates for deer rifle season in GA, but consider wearing some blaze orange.

Blue Ridge Wildlife Management Area which the trail passes through from Springer Mtn. to Hightower Gap has a Thanksgiving week hunt every year. It's pretty popular and actually one of my favorite hunts. Blue Ridge WMA was actually the very first Wildlife Management Area in the entire nation. It was created in 1936 and was a revolutionary concept back then. For nearly all of the rest of the trail in Georgia deer season will be open too. I would personally wear orange though it's not legally required if you're not hunting.

To be exact, the Blue Ridge WMA hunt will run from November 21 to the 24. You can expect somewhat higher hunter numbers then since the WMA is only open for three 4-day rifle hunts a year. If you make it as far as Hogpen Gap Chattahoochee WMA is open from the 17th to the 25th.
