Check out Mountain-forecast.com. You can select from a number of mountain peaks and see what the weather forecast at that elevation is expected to be.
As an example, there's the page for the weather forecast at Mount Collins between New Found Gap and Clingman's Dome.

Looks like at an elevation around 6,000', the temperatures are going to be right around 60 degrees.
