Trail Days hike

So I'm thinking of hiking from here (Watauga Dam area) to Damascus for Trail Days. How crowded do you think the AT will be? I was thinking of getting on the Iron Mtn trail at Shady Valley and going that way. I've heard that water situation can be iffy on the IMT but I think I'd like to go the less crowded route. Where are the reliable water sources between Shady Valley and Damascus?
