Planning an over nighter on the AT in GSMNP in May. Do I really need to hang my food? Just taking light snack stuff, I'll have in ziploc bags.

Yes. And not just food, but also toothpaste, deodorant, and anything with scents.

My last 5 trips in GSMNP (when I still lived there) had bears visiting the campsite. If anything, it keeps the bears by the bear lines and not by your hammock. It's just as much for the bear's protection as for yours. If bears get used to humans they might have to be euthanized. Rain man is right, ANYTHING that smells should be on the bear line. Bears are curious!
Every shelter has bearbagging lines. Use them as Rain Man describes. It was astounding how much bear sign I encountered through GSMNP last October, plus a very close bear encounter at a shelter just after I finished my lunch.
