Default Effect of holidays on resupply in Georgia/NC?

    Hi!
As someone unfamiliar with US business practice I'm wondering what effect holidays have on resupply options in the first week or two on the trail.
I figure after a fortnight I'll be in to the swing of things but I am looking at a start date of about 24/5 March 2013 and realised 29 March is Good Friday.
In Australia much of our retail shuts down for 4 days over Easter.
I was looking at starting from Amicola on the Sunday/Monday to get to Walasi-Yi well before the weekend but am wondering if I may need to carry an extra day or two of food from there as Hiawassee etc may be limited resupply.
    Cheers

I'm pretty sure the local grocery store chains in North Georgia/NC (Ingles) will be open Good Friday and that Saturday. Probably closed or very limited hours on Easter Sunday. I believe the restaurants will probably be opened for Aaster Sunday lunch/dinner. Good luck.
