I can tell you from my study of PCT backpackers at trailjournals.com that the "average" is seven chews before swallowing on the salad course, three chews before swallowing on the soup course and then people really get slowed down by the "high sierra" sandwich course to 12.5 chews before swallowing. Anish states clearly in the article that she did no chewing at all which makes her accomplishment all the more amazing.
