I was there last weekend. There is a piped spring slowly running between deep gap and the summit of Cold Mountain and there is water in multiple places between deep gap and the Daniel Boone Boyscout camp nothing on the ridge between deep gap and shining rock gap. Can't speak to anything outside that area.
It's beautiful there and a great time to go.
Probably too late a response to help SonrisaJo, but here's a trip report from the Art Loeb Trail from last spring. We hiked it just after a rain storm, so no shortage of water for sure, but the report makes note of several water sources that seem reliable under normal conditions. Great trail.
